I’m not sure why, but as someone who has never worked in a restaurant or bar (the closest I’ve come was a coffee shop), I never considered that specialty cocktail ice was bought from a vendor. I assumed a vendor provided conventional ice, but for some inexplicable reason, I imagined restaurants creating their own ice cubes in specialized molds. It wouldn’t be the first time I was wrong!
