One vendor supplies cocktail ice to a large portion of Manhattan’s restaurant and bar scene. Watch what it takes to create perfect ice.
I’m not sure why, but as someone who has never worked in a restaurant or bar (the closest I’ve come was a coffee shop), I never considered that specialty cocktail ice was bought from a vendor. I assumed a vendor provided conventional ice, but for some inexplicable reason, I imagined restaurants creating their own ice cubes in specialized molds. It wouldn’t be the first time I was wrong!
As it turns out, there’s a lot more to perfect cocktail ice cubes and shapes than I anticipated. And let me tell you, seeing the process as they perfect each cube and sphere is the most satisfying thing I’ve seen in a long time. It’s not a joke! Every day, Hundredweight Big Ice, NYC’s most popular ice vendor, crafts tiny, flawless ice sculptures, and the result is pure art.
