I have a friend who often enjoys the finer things in life, including expensive wine and high-end food. So imagine my surprise when I learned he’d never heard of burrata cheese. I’m sorry, what?! After getting over my initial shock, I explained that the cheese is a cousin of mozzarella but even creamier and more decadent. I talked about pizza with burrata, tomatoes and burrata, crostinis with burrata, but I forgot all about salads with burrata. My friend, who is now a die-hard fan of the cheese, will be so excited when I share this recipe with him after I share it with you, of course.
Once you’re ready to get started on your Fried Burrata Salad, you’ll need the following ingredients:
- 1 shallot thinly sliced
- ¼ cup white balsamic vinegar
- 1 ball burrata
- 1 head frisée torn into bite-sized pieces
- 1 head radicchio halved and chopped
- ¼ cup + 2 tbsp olive oil divided
- 1 baguette sliced
- ¼ cup potato starch
- 1 ½ tsp salt divided
- 2 large eggs beaten
- 1 cup panko breadcrumbs
- neutral oil for frying
- 2 tangelos segmented
- 227g (8oz) black mission figs quartered
- 100g (3.5oz) prosciutto torn
- ¼ cup mustard microgreens
