Upgrade Taco Tuesday with Shrimp Tacos Gobernador!

A tailgate-winning shrimp taco with crispy cheese edges? Say less. Tacos gobernador may be the taco-night upgrade I didn’t know I needed.

I’m always here for a good shrimp taco, but Sam the Cooking Guy may have just found my next food obsession: tacos gobernador.

Sam discovered them while judging a tailgate competition at a San Diego FC game, and apparently, one bite was enough to change his entire worldview of shrimp tacos.

These tacos are loaded with shrimp, poblanos, tomatoes, onion, cilantro, serrano, garlic, chipotle, and Monterey Jack cheese. The real magic happens when the cheese melts directly onto the tortilla and gets all crispy around the edges.

I also love the idea of adding a splash of soy sauce, because apparently, rules are merely suggestions when tacos are involved. And if the final result tastes amazing, who am I to argue?

The whole thing looks cheesy, spicy, shrimp-packed, and dangerously easy to crave.
