Fried Burrata Salad with White Balsamic Dressing [Recipe]

I have a friend who often enjoys the finer things in life, including expensive wine and high-end food. So imagine my surprise when I learned he’d never heard of burrata cheese. I’m sorry, what?! After getting over my initial shock, I explained that the cheese is a cousin of mozzarella but even creamier and more decadent. I talked about pizza with burrata, tomatoes and burrata, crostinis with burrata, but I forgot all about salads with burrata. My friend, who is now a die-hard fan of the cheese, will be so excited when I share this recipe with him after I share it with you, of course.

Once you’re ready to get started on your Fried Burrata Salad, you’ll need the following ingredients:

  • 1 shallot thinly sliced
  • ¼ cup white balsamic vinegar
  • 1 ball burrata
  • 1 head frisée torn into bite-sized pieces
  • 1 head radicchio halved and chopped
  • ¼ cup + 2 tbsp olive oil divided
  • 1 baguette sliced
  • ¼ cup potato starch
  • 1 ½ tsp salt divided
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • neutral oil for frying
  • 2 tangelos segmented
  • 227g (8oz) black mission figs quartered
  • 100g (3.5oz) prosciutto torn
  • ¼ cup mustard microgreens
