Sous Chef Fernando Natividad and his colleagues produce over 400 pancakes daily at Chez Ma Tante, a New York City restaurant known for its pancakes. Regarding the perfect short stack, I think it’s safe to say they know what they’re talking about.

I doubt anyone will be surprised to find that the secret ingredient is clarified butter. Natividad and Chez Ma Tante understand the value of a crispy edge and a delicate and fluffy interior, which requires skill… and clarified butter! I could eat this mouthwatering dish at every single meal.

…the first hotcake to come out of the pan will probably be a bit misshapen. Just scoff it, and carry on with the rest.
